The Flavours of Sicilian Pastries
When arriving in Sicily, the first thing a tourist does is undoubtedly go to the seaside and take a swim in the crystal-clear waters that lap the shores. The second is to enjoy the delicacies of the local cuisine, famous the world over for its intense flavours, spicy fragrances and vivid colours. The most popular part is the Sicilian pastry, with its endless offer of sweets with unforgettable flavours.
The sweet ricotta of cannoli and their crumbly pastry, the complexity of Sicilian cassata, the sugar of almond pastries, the smooth creaminess of Erice Genovese. A combination of emotions for your taste buds.
Sicilian pastry is not only meant to nourish and delight the palates of those who have the pleasure of trying these delicacies, it is also meant to take us back in time, as it is an art with very ancient origins.
There are many more links between the history of Sicilian sweets, myth and religion than we might think. All the sweets that arrive on our tables today have been the result of the union of the cultures and people that have lived in this land: Sicans, Siculians, Phoenicians, Greeks, Romans, Byzantines, Arabs, Normans, Germans, French, Spanish. Each of these people has brought its contribution to the dishes we taste today.
The first sweets to be made were dedicated to the great Mother Goddess, bringing to the altar a dough amalgamated with wheat, honey and milk and creating a cuccia. When the Greeks later brought the almond tree, the grapevine, the olive tree and new techniques for working the land to the island, they expanded their offerings and were reinforced by the cult in honour of Dionysus, Adonis, Demeter and Persephone.
